Ganache recipe
Keep Form does not sell recipes or courses, but the most common question we get from you is what ganache do we use for moulds.

For you, we have prepared a ganache recipe, which we use when testing our moulds. You can use it, or you can try your own version. This recipe is not the only correct material for coating with moulds.

To prepare 1 kg of ganache, you will need in equal proportions:
  • chocolate (any suitable - white, black,% cocoa content is also not important, you do not need to temper) - 333 gr.;
  • white candy melts - 333 gr.;
  • butter 82% - 333 gr.
The cooking process is very simple:
  • We melt the chocolate in a convenient way for you (water bath or in a microwave oven for 10-15 seconds pulses)
  • Melt the candy melts in the same way separately from the chocolate.
  • Mix melts and chocolate
  • Add room temperature butter to the mixture
  • Mix thoroughly until smooth. You can use a hand blender for mixing.

Your ganache is ready.
